Normally, when I go to a good restaurant, I leave wanting to make something I had there. It can be something new or a pleasant surprise altering something tried and true. However, last week I purchased beef short ribs to serve as the main entrée for a small dinner party. Now, I have never eaten short ribs so I was thinking a lot about how to prepare them. As luck would have it, while traveling, I went to a restaurant that had them on the menu. This was a fantastic opportunity to try them and gain a better understanding of short ribs. What a disappointment! They were terrible, stringy, dry and with little flavor. I actually, sent them back. Now I was not upset, I was determining whether I should make the ribs for my guests or switch to something more palatable. I thought through what was wrong with ribs and potential cures. On Saturday morning, I made up my mind. I had a solution for each flaw. Try this recipe for Beef Short Ribs. They were flavorful, moist and melted in your mouth. The sauce was excellent over the accompanying blue cheese mashed potatoes. My guests were very pleased and I am adding beef short ribs to my repertoire of favorite foods.
Nortel comes up short...
Last week, I fondly reminisced about Nortel. Today, I angrily express my disappointment. As most of you know, Nortel laid off a number of employees in December. They softened the departures by offering to pay for vacation time, pensions, job placement services and severance packages. As a result of filing for bankruptcy, they have withdrawn the packages and services. With times as they are, this was a cruel action to take against experienced and faithful employees. This was not the way to reward twenty plus year personnel for their service. Finally, it was not enough to reverse the severance packages, but they apparently paid laid off executives by December 31, so they would not be affected.
I hope Nortel returns from bankruptcy as a stronger company contributing to our industry. However, this will be a black mark on their legacy. If I have any of the facts wrong, I would appreciate comments.
