First of all, thanks to all of you that sent me notes regarding my mother's passing. They were greatly appreciated. The trip home was hard as her death was quite a surprise to all of us. However, the funeral was a celebration of her life. We cried tears of sadness and joy over the three days together and departed much stronger as siblings.
I was surrounded by food the entire time I was there, most of it bad. Fast food, catered food and take a wild guess about the origins of this or that dish. I longed to get home and cook. However, there was only enough time to kiss the wife and travel to IT Expo on Super Bowl Sunday. I made some finger foods for my wife before leaving (coconut shrimp, fried shrimp, fried oysters and buffalo wings). She ate well I am sure. However, today's recipe is vanilla ice cream. I like this version because it does not require cooking and it is very good. A good vanilla ice cream recipe is important because you can use it as a base for so many other flavors (strawberry, cookies and cream, butter pecan, cherry vanilla, etc.). Make it. Enjoy it. I will use it in other dessert recipes from time to time.
