I forgot I was traveling on Sunday so my choices for recipe of the weekend was limited to either Saturday breakfast (open-faced grilled cheese on jalapeƱo cheese bagel) or Grilled Pork Tenderloin with Hatch Chile Cream Sauce. The choice was a bit obvious. In any event, my favorite grocery store in Texas, Central Market, is having a Hatch Chile festival. They celebrate everything made with Hatch Chiles, bread, cheese, salsa, burgers, etc.

Scallops and the State of IP

A busy weekend for food as usual with fried chicken on Saturday, omelets Sunday morning and Scallops with Cheese Sauce and pasta Sunday afternoon. While I have yet to share my fried chicken recipe or the omelet for that matter, the dish of the week was the scallops. A couple of years ago I was in Chile working with a distributor and had this amazing dish. It is very similar to Coquilles St. Jacques.

Wednesday's case study was a single location with a leased IP PBX and GO!Anywhere service. This case study is interesting as the customer already had an IP PBX, Cisco Call Manager, and VoIP infrastructure. This was a very similar environment to a question I got at IT Expo last year regarding the value of replacing traditional PSTN terminations with a completed VoIP infrastructure. Her incumbent carrier had informed the questioner that it would not be cost effective to replace their TDM service agreement with an IP service agreement.

Oysters were the central food on Saturday. I made oyster po' boys accompanied with oyster soup. I knew the po' boy would be good but the soup was fantastic. It took me a little while to decide on the recipe but in the end it is very similar to a chowder but without potatoes.

Mashed Potatoes with where is the IP?

As usual, I ate well this weekend. I did forget to mention that two weeks ago I made my first corned beef from scratch. I found the recipe I used a bit curious in that it mentioned 3 hours cooking time and did not note in the summary the ten days of pickling or brining required. In any event, I may never buy corned beef again, it was excellent!
