An Incredible Can of Tomatoes and a Bunch of Writing

The only time we have breakfast is on weekends. I do my best to mix it up so that we aren't just eating pancakes and eggs. I've added hash browns and latkes to my repertoire but this Sunday, I decided to make my version of a potato pancake. I wanted something a little lighter and savory. The Potato Pancakes turned out really well. I served them with an egg sunny side up and fried prosciutto. Hey! We walked three miles after breakfast. For dinner, I made Chicken Parmesan. I didn't measure anything so it can't be the recipe of the week but I did learn something incredible. For years, I have heard about San Marzano tomatoes from the chefs on various cooking shows. Sunday, I purchased a can just for the chicken parmesan sauce. Immediately upon opening the can, you can see the richer red color and thicker sauce. Not convinced of the taste improvement, I opened a similar can of Hunts tomatoes. I can only say wow! The Hunt's tomatoes were sour, in a thinner sauce and less rich in color. The San Marzano tomatoes were sweeter in taste and I was now convinced. You will pay more but your taste buds will be rewarded. I am not sure what I will do with the Hunt's tomatoes that are now in the refrigerator. However, the recipe of the week is Potato Pancakes. Make this as either a side dish or the centerpiece for breakfast. You will not be disappointed. Enjoy!

Today was supposed to about broadband prices in the US and the rest of the world. However, I am traveling and all of my data is on my desk. So I thought I would share a call I had last week. A customer called looking for assistance to address a billing issue. For them it was an emergency, for me it was an unscheduled interruption. However, I stayed on the phone with them until it was resolved and the caller asked for my email address to send verification. When I spelled my name, the caller asked me if I was the Byrd that wrote the blog. I answered yes and he said it does get around. So, it seemed like a good time to note that the blog is now available in a number of locations.
