Potatoes and Onions

Ingredients
  • 3 russet or Yukon gold potatoes
  • 1 sweet onion
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground pepper

Directions

Slice potatoes and onions very thin (⅛ of an inch).

Heat a heavy skillet over medium high heat. Add oil and butter to the pan. When the butter foams, add the potatoes, onions, garlic powder, salt and pepper to the pan. Toss or mix the potatoes and onions to cover with the seasonings. Reduce heat to medium low and cover for 3-4 minutes. Uncover and turn the potatoes and onions. Cover and let cook another 3-4 minutes. Do this one more time and finally uncover and let the potatoes begin to brown. Turn and brown them on the other side.  Total cooking time is about 20 minutes or until the potatoes are tender and browned.
