Happy New Year!
New Year's Eve is the one of two days in the year when I cook without regard to anyone else's desires (the other day is my birthday). This menu consisted of canapés of salmon roe and heirloom tomato salad each resting on a cracker topped with crème fraiche. A third canapé was duck liver with truffles. The second course was a simple mix green salad with apple-smoked bacon, toasted pecans and walnuts, and thinly sliced strips of aged cheddar. The salad was tossed in a red wine vinaigrette. The main course was a deconstructed Beef Wellington with green peppercorn cream sauce. The meal ended with a pear tart. A meal such as this needed a lean cut of meat, hence the filet mignon.

The industry is watching with growing interest the financial activity of Level 3 as it staves off bankruptcy. First raising new funds, attempting to reduce debt and finally, watching its credit rating move down and then up. We certainly hope that they are able to stave off bankruptcy as many carriers use their network and services.
Also, in keeping a watch on the FCC, there is one change worth noting. Deborah Tata has indicated that she will be leaving in January. This is not unexpected.
