A Mouthful: Grilled Butterflied Chicken, CTO, CIO and FCC

Okay so the weekend was kind of a repeat of Easter, a little bit of rain and a little cool. Perhaps, then it was okay that I repeated my first dish of the year. My wife asked for Crab Cakes on Friday. Since, I blogged that dish some weeks ago, I looked it up and followed my own recipe. It was just as good as the first time. On Saturday, we were planning to eat out and decided at the last minute to have dinner at home. This presented a problem, as nothing was thawed and ready to cook. I found a lamb curry in the freezer and some leftover turkey. I quickly made a turkey curry with tomatoes and peas and we had a fine feast on the day the Sikhs were celebrating their New Year in downtown Dallas. However, the dish of the week was the Grilled Butterflied Chicken. This is one of my favorite ways to prepare chicken or Cornish game hens. You remove the backbone and flatten the birds. I like to marinate them overnight and then determine the next day what type of cuisine will be represented on the table. If I am going to go with traditional American side dishes then I use my white seasoning mixture. If I decide we are having Asian side dishes, then I use Chinese five spice and dark soy to season. Yesterday, we decided upon Mexican so I made the fresh salsa and guacamole, but used adobo as the primary seasoning mixture for the poultry. Try the recipe and then experiment as you take it around the world (India, Greece, Thailand and others). Enjoy!


Their names may not easily roll off your tongue but the technology and communications team built by President Barack Obama has impressed the many that were observing his selections. The first was Vivek Kundra, America's CIO, next was Julius Genachowski, the FCC Chairman nominee and finally, Aneesh Chopra, our country's CTO. There is much that these three gentlemen must do to improve our technology infrastructure and communications policies. I am anxious to know how they will separate their functions and how they will integrate their actions. Each has an interest in our communications infrastructure and broadband capabilities. Each must know that cloud computing will impact every government entity and is of great interest to businesses and Internet related applications. Additionally, with regard to the Internet itself, each must consider its current usage and direction of new applications and services. Finally, our new CTO and CIO need to address out technology procurement practices. The government must accelerate its adoption of new technologies while reducing its cost of acquisition.
