·         1/3 lb. Kasseri cheese

·         1 egg

·         1 tbsp. milk

·         1 cup flour

·         ¼ cup olive oil

·         ¼ cup brandy

·         Juice from ½ lemon

·         2 tablespoons cold butter


Cut slices of Kasseri cheese about 1/3-1/2 inch thick. Mix egg with the milk. Dip cheese into the flour, then egg mixture, back into flour. Fry in olive oil in a sauté pan until golden brown on each side. Remove from the pan serving plates. Add brandy to the sauté pan, flame and yell "Opa!".  Add lemon juice when the flame dies down. Remove from heat and stir in the butter. Pour the sauce over the cheese and serve with crusty bread.
