Mirepoix, Classic...Next Generation, Priceless

The Fourth of July is a grilling weekend and mine was no exception. I fixed smoked chicken breasts, St. Louis Style barbeque ribs, bacon wrapped scallops and glazed shrimp. It was a feast for the eyes and soul. Thus far I have not shared any of the grilling recipes because, items such as the chicken and ribs begin by being marinated for 24 hours, the chicken in a brine of salt and lemon juice, the ribs rubbed with barbeque seasonings. After which both are placed in a smoker with either hickory or mesquite woods for at least 90 minutes and up to four hours for the ribs. They are finished/glazed using the gas or charcoal grill. This is not quick and easy, but it produces a professional result. For the bacon wrapped scallops, I begin by frying the bacon to 50-75% done. This produces less flame on the grill and crisper bacon wrapping without over cooking the scallops, delicious. With all of this, what recipe won for the long weekend? Baked Tilapia with Mirepoix and Lime. Mirepoix is a classic mixture of equal amounts of sautéed finely diced carrot, onion, and celery, seasoned with minced herbs. Starting with a mirepoix, was the basis for much of my early cooking. This recipe represents many memories for me. It is simple to make and very good to eat. Enjoy!

IP Communications is at the center of the next generation of telecom services. Whether the discussion is about broadband, wireless communications or LTE, it is all based around converged services and digital communications. We do not need to oversell this evolution, as it is well underway. When I began in telecom in the early 80's, the big change was the launch of competition. Companies like Satellite Business Systems, Microwave Communications Inc. (MCI), and Southern Pacific Railroad International (Sprint). Working for Sprint was very dynamic and exciting as we battled the bigger boys, the RBOCs. Today has the same kind of energy. At Broadvox, we know that the adoption rate for VoIP/SIP Trunking is very low compared to the total available market. I am defining the available market as all businesses not just those with an IP PBX or IAD. Another important shift in the IP communications market is the addition and evolution of new products and services. Since the ITSPs are smaller and more nimble than the major ILECs and CLECs, we can identify and develop new products offerings much more quickly. Two years ago, our value proposition was based around cost reduction and unlimited calling. Two years ago, connectivity was dominated by T1s. Today, we discuss business continuity, dynamic load balancing and CNAM with our prospects. Moreover, connectivity options include DSL and Cable with near toll-quality voice communication.
