Mondays are the day for food but yesterday I made something startlingly good and very simple. I will not be providing a recipe, as that takes time and, in my case, advance notice. I normally cook without a recipe and, so it was yesterday when I decided to make French onion soup. We had an ice layer in Dallas and it seemed like a great day for it. However, as I began cooking, I realized that French Onion soup just isn't a complete meal. I caramelized the onions as usual and seasoned as though making the traditional soup. However, before adding the broth I added strips of red bell pepper, celery, and carrots. I did a quick sauté and added a spoon of tomato paste, Dijon mustard, two chopped garlic cloves and a splash each of white wine and Worcestershire sauce. I reduced the wine and added 4 cups of chicken broth. I simmered for at least 30 minutes. After which I cut some (8 ounces or so) of the leftover pork roast (Monday's recipe) into thin strips (¼ inch by 1 inch) and simmer uncovered for 10-15 minutes more. I served in the classic style; in a bowl, top with a spoon of brandy, sour dough round and gruyere cheese. Good luck. It will come close to what I had with the above additions. When you cook by touch and taste, recipes are hard to duplicate.
