- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 8 ounces of cheddar cheese curds
- ½ cup buttermilk
- 1 cup panko breadcrumbs
- Peanut oil for frying
Directions:
In a medium bowl mix together the flour, baking powder, and salt. Add the cheese curds and stir gently to coat. Pour the buttermilk into a separate bowl. Gently shake off the excess flour from the curds and add them to the bowl with the buttermilk. Stir gently to coat. Remove them from the butter milk and roll in the panko breadcrumbs until evenly coated. Let the curds sit for a few minutes so the breadcrumbs will adhere to them.
Heat the oil in a large, heavy skillet over medium high heat to 360oF. Carefully add the curds to the fryer and fry for approximately 1 minute or until golden brown. Remove from the oil and place on a rack or paper towels. Sprinkle with salt and serve immediately.
