French Onion Soup

 

Ingredients

  • 1/4 cup olive oil
  • 4 onions, sliced thinly
  • 3 tablespoons flour
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 2 fresh thyme sprigs tied together
  • ½ cup red wine
  • ¼ cup Marsala
  • Kosher salt and freshly ground black pepper
  • 2 quarts beef broth
  • 1 baguette, sliced on the bias
  • 1/2 pound grated Gruyere

Directions

Place a large pot over medium heat. Add the olive oil, onions and a teaspoon of salt. Cook until the onions are very soft and caramelized, about 30-45 minutes. Stir in the flour cooking for another two minutes. Add the garlic, bay leaves, thyme, wine and Marsala, stir and simmer for 3-5 minutes. Add the beef broth and bring to a boil, reduce the heat and simmer uncovered for 20 minutes. Remove and discard the bay leaves and thyme sprigs. Check seasoning and adjust the salt and pepper.

To serve:  Toast the baguette slices in either a toaster or the oven under broil.

Ladle the soup into bowls and float one or two slices of the toast on top. Cover with cheese and place the bowls under the broiler to melt the cheese for several minutes. Remove and serve. Be careful, as the bowls will be very hot.
