- 2 matzo sheets
- Hot water
- 2 beaten eggs
- ½ teaspoon salt
- 1 teaspoon sugar
- ½ teaspoon vanilla
- Pinch of cinnamon
- 2 tablespoons olive oil
Directions:
Crumble the matzo sheets into ½-inch pieces and place into a bowl. Cover with hot water for 30 seconds. Drain the water but do not press dry. Add the eggs, salt, sugar, vanilla and cinnamon. Stir until a uniform batter develops.
Heat a sauté pan over medium heat and add the olive oil. When the oil is hot, pour a ¼ cup of the batter into the pan forming a small pancake. Depending upon the size of the pan, you can have two or three going at a time. Flip when golden brown and brown the other side.
Serve with butter, syrup or jam.
