POLLO ASADO (Barbecued Chicken)

Ingredients:

·         1 broiler or frying chicken (3 pounds)

Marinade:

·         1-1/2 tablespoon ground ancho chile powder

·         1 teaspoon dried oregano

·         1 teaspoon ground cumin

·         1/4 teaspoon ground cloves

·         1/4 teaspoon ground cinnamon

·         1 teaspoon powered onion

·         4 garlic cloves, minced

·         3 tablespoons apple cider vinegar

·         1/4 cup orange juice

·         1/4 cup lime juice

·         1 teaspoon kosher salt

Directions:

In a small bowl, mix all ingredients together.

 

Butterfly the chicken by cutting the backbone using either kitchen shears or a sharp knife. With the breast side up, press firmly on the breastbone so the chicken will lie flat. Rub the marinade all over the chicken, cover and let rest for at least 4 hours, overnight is best.

 

Pour the marinade into a small saucepan and bring to a boil. Boil for one to two minutes.

Prepare your gas or charcoal grill for indirect cooking. Place the chicken in the center of the grill breast side up, away from heat and roast for 30 to 45 minutes. Baste the chicken with the marinade every 10-15 minutes. The chicken is done when the juices run clear or reaches an internal temperature of 165o F.

 

Prior to serving, place the chicken breast side down directly over the heat and add additional color/grill marks. This only take a couple of minutes.


Remove from heat and allow the chicken to rest 5-10 minutes prior to serving. Slice or cut the chicken into pieces. Serve with my favorite accompaniments, Guacamole, Tomato and Onion Salsa and Grilled Vegetable Salsa.
