Calamari Stuffed with Crab, Cheese and Jalapenos

Ingredients

  • 8 cleaned calamari tubes; 4-5 inches in length (2 per person)
  • 8 ounces of linguini prepared according to package directions
  • 2 cups of Marinara Sauce (see following recipe)
  • 2 dices jalapenos
  • 4 ounces sharp cheddar cheese
  • 4 ounces crabmeat
  • ½ teaspoon Old Bay Seasoning
  • 8 toothpicks
  • 2 ounces grated parmesan cheese
  • 2 tablespoons chopped parsley

Directions

Mix the Jalapenos, cheese, crabmeat and Old Bay seasoning mixture with a spoon. Stuff each of the tubes with the mixture. Close the end with the toothpicks to prevent the stuffing from falling out during cooking.

Bring the marina sauce to a boil. Gently place the stuffed calamari in the pot, layering as required. Cover and reduce to a simmer cooking for 5 minutes. Turn each calamari over and cook for five minutes more.

Serve over linguini pasta, dividing the calamari over four plates. Garnish with parmesan cheese and parsley.

Marinara Sauce

Ingredients:

  • 2 tbsp olive oil
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, crushed
  • 1 tsp red pepper flakes
  • 1 28-ounce can tomato puree
  • 1 14-ounce can crushed tomatoes
  • 1/2 cup beef or chicken stock
  • 1 1/2 cups water
  • 1 tsp sugar
  • 1 tsp salt

Directions

Heat a 4-quart saucepan or small stockpot and add the olive oil. Add the onion and sauté until translucent. Add the garlic and pepper flakes and cook for an additional 2-3 minutes being careful not to brown. Add the tomato puree, crushed tomatoes, beef stock, water, sugar and salt. Stir and bring to a boil. Add more water if the sauce is too thick. Reduce heat to a simmer, cover and cook for 30 minutes.
