Ingredients
- 2 cups mashed potatoes
- 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon white seasoning mixture
- 2 ounces smoked cheddar cheese, grated
- 1/4 cup buttermilk
- 1 egg
- 2 tablespoons butter, melted
Directions
In a large bowl mix together the potatoes, flour, baking powder, seasoning mixture and cheese. Make a well in the center and pour in the buttermilk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each pancake. Brown on both sides and serve hot.
