- 1 pound new red or small Yukon gold potatoes
- 2 tablespoons butter
- 1 cup sauerkraut
- ½ cup chopped fresh parsley
- 1 teaspoon caraway seeds
- ½ teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
Directions
Peel a strip of skin from around the center of each potato. Place the potatoes into a large pot full of salted water. Bring the water to a boil, cover and reduce to heat to simmer for 10 minutes or until the potatoes are tender.
Drain the potatoes and return to low heat. Add the butter, sauerkraut, parsley, caraway seeds, salt and pepper. Stir gently to mix and heat through.
Serve immediately.
