- 4 heirloom tomatoes
- Kosher salt
- Fresh ground black pepper
- 1 sweet onion (Vidalia, Maui, Walla Walla, etc), halved and sliced thinly
- ¼ cup pickled jalapenos peppers or fresh sliced thinly
- 1 avocado, diced
- 1 tablespoon fresh oregano, chopped (option 1 tsp dried)
- 1 teaspoon fresh thyme, chopped (option ½ tsp dried)
- 2 tablespoons extra virgin olive oil
- 1 tablespoons white wine vinegar
- 1 bunch basil
Directions
Combine the onion, jalapenos peppers, avocado, oregano, olive oil and white wine vinegar in a bowl. Mix gently and let sit for 30 minutes to an hour.
Slice tomatoes right before serving, put them on a platter. Sprinkle the tomatoes with salt. Spoon the onion and avocado mixture over the tomatoes. Top with freshly ground pepper.
