- 4 large turnips, peeled and cubed
- 1 cup milk
- 4 tablespoons butter
- ¼ cup grated asiago cheese
- Kosher salt and freshly ground pepper
Directions
Add the turnips to a large pot of cold salted water. Bring to a boil, then reduce to a simmer and cook until soft and tender, about 15 - 20 minutes.
Drain the turnips in a colander in the sink. Put the turnips back in the pot over low heat. Add the milk, butter and grated cheese. Using either an immersion blender or mixer, puree until smooth.
Taste for seasoning, add salt and pepper as needed.
Cover and keep warm in a 175oF oven until ready to serve.
