Ingredients
- 2 tablespoons Kosher salt
- 2 cups elbow macaroni or cavatappi
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups half and half, or Milk
- 6 ounces apple wood smoke cheddar or Gruyere cheese, grated
- 1teaspoon White Seasoning mixture
- Pinch nutmeg
Directions
Preheat the oven to 375o.
Bring salted water to a boil and cook the macaroni or cavatappi according to the package directions.
Melt the butter in a medium pot and add the flour. Cook over low heat for 2-3 minutes, stirring with a whisk. While whisking, add the half and half whisking until thickened. Turn off the heat and the grated cheese (reserving about a quarter to top the dish), 1 teaspoon seasoning mixture and nutmeg. Add the cooked pasta and stir well. Pour into casserole dish and top with remaining cheese.
Bake for 25 to 30 minutes, or until the cheese is browned on the top and serve immediately.
