- 6 large cloves garlic
- ¾ teaspoon kosher salt
- 2 egg yolks
- 1 teaspoon fresh lemon juice
- Pinch of mace
- 1 teaspoon of tomato paste
- ¾ cup olive oil
- ¼ cup chopped chives
Directions:
Place garlic cloves in a blender and pulse until finely chopped. Scrape down the sides for even chopping. Add the salt, egg yolks, lemon juice, mace and tomato paste and process until well combined.
With the blender running, add the olive oil in a thin, steady stream until the mixture is thickened. Remove to a bowl and stir in chives. Taste and adjust salt.
